Why Italian says 'gelato al cioccolato' for 'chocolate ice cream'
In English you name a flavour by putting it in front of the food: chocolate ice cream, lemon tea, mushroom pizza. Italian works the other way round. The food comes first, then a joined to the definite article, then the flavour: gelato al cioccolato, tè al limone, pizza ai funghi.
English speakers tend to make one of two mistakes. Some copy the English word order and say cioccolato gelato. Others reach for di, the preposition they know best for "of". Once you know the pattern, you can read almost any Italian menu or ice cream counter: alla fragola, al pistacchio, alla vaniglia.

How it works
The construction has three parts: food + a + article + flavour. The preposition a always merges with the article, so you need to choose the article that matches the flavour word:
al before most masculine nouns: al cioccolato, al caffè
allo before masculine nouns starting with s + consonant, z or y: allo yogurt
alla before feminine nouns: alla fragola, alla menta
all' before a vowel: all'arancia
ai, agli, alle in the plural: ai funghi, alle mandorle
A rough guide to singular and plural: flavours you think of as a substance stay singular (al cioccolato, alla fragola for a flavour). Pieces you can see and count often go plural (ai funghi, ai mirtilli). The phrase means something like "done in the style of" or "flavoured with", which is why Italian uses a here.
Vorrei un gelato al cioccolato, per favore.
(I'd like a chocolate ice cream, please.)
The words
Ice cream flavours
At the gelateria nearly every flavour follows this pattern. Masculine flavours take al: cioccolato, pistacchio, caffè, cocco, cacao, caramello, mango. Feminine ones take alla: fragola, vaniglia, nocciola, banana, ciliegia. The same flavours work after other sweet foods, such as yogurt, sorbetto, frullato or budino.
Prendo un cono al pistacchio e alla nocciola.
(I'll have a pistachio and hazelnut cone.)
Mia figlia mangia sempre lo yogurt alla fragola.
(My daughter always eats strawberry yogurt.)
D'estate bevo un frullato alla banana ogni mattina.
(In summer I drink a banana smoothie every morning.)
Il gelato alla vaniglia con il caramello è il mio preferito.
(Vanilla ice cream with caramel is my favourite.)
Hanno un sorbetto al mango e uno al cocco.
(They have a mango sorbet and a coconut one.)
Ho comprato una crema al cacao e un gelato al caffè.
(I bought a cocoa spread and a coffee ice cream.)
Cakes, biscuits and fruit
A torta or a biscotto takes the same pattern. Whole pieces of fruit or nuts are usually plural: ai lamponi, ai mirtilli, alle mandorle. A flavour like arancia starts with a vowel, so it becomes all'arancia.
Mia nonna ha fatto una torta all'arancia.
(My grandmother made an orange cake.)
Questi biscotti alle mandorle sono buonissimi.
(These almond biscuits are delicious.)
Al bar ho preso un muffin ai mirtilli e una crostata ai lamponi.
(At the café I had a blueberry muffin and a raspberry tart.)
Drinks
With tè you name the flavour the same way: al limone, alla menta, alla pesca. Herbal tea is tè alle erbe.
Per me un tè alla menta, e per lei un tè alle erbe.
(A mint tea for me, and an herbal tea for her.)
D'estate in Italia si beve molto tè alla pesca.
(In summer people in Italy drink a lot of peach tea.)
Savoury dishes
Savoury food works exactly like sweet food. A pizza or a plate of pasta is named after its topping or sauce: pomodoro, fungo (plural funghi), formaggio. Risotto follows the same pattern: risotto ai funghi.
Stasera faccio la pasta al pomodoro.
(Tonight I'm making pasta with tomato sauce.)
Una pizza ai funghi e un panino al formaggio, grazie.
(A mushroom pizza and a cheese sandwich, thanks.)
Watch out
The pattern is very common, but it is not the only way to describe food. When the ingredient is what the food is made of, Italian often uses di instead. Fruit juice is succo di limone or spremuta d'arancia, never al limone. Apple cake is usually torta di mele, although torta alle mele is also heard. Learn fixed dishes like these as whole phrases.
Don't drop the article: gelato a cioccolato is wrong, you need gelato al cioccolato. Also keep the order: food first, flavour second.
Summary
To say what flavour a food has, start with the food, then add a joined to the article (al, alla, all', ai, alle), then the flavour: gelato alla fragola, tè al limone, pizza ai funghi. Use plural for visible pieces such as mushrooms or berries. Remember that juices and some classics use di instead: succo d'arancia, torta di mele.
