Why the plural of 'gâteau' is 'gâteaux', not 'gâteaus'

In English, almost every plural ends in -s. French mostly works the same way, but there is one big family of nouns that doesn't: words ending in -eau, -au and -eu add an -x instead. So one gâteau becomes two gâteaux, a jeu becomes jeux, and a single cheveu becomes a head of cheveux.

The tricky part for English speakers is that you can't hear it. The final -x is silent, just like a final -s would be, so gâteau and gâteaux sound exactly the same. Your ear gives you no clue, and your English habits push you towards writing gâteaus. On top of that, a handful of everyday words such as pneu (tyre) and bleu (bruise) break the rule and take -s, which can make the whole group feel unreliable. It isn't: the -x rule covers the vast majority.

How it works

Look at the last letters of the singular noun. If it ends in -eau, -au or -eu, write the plural with -x. The article changes as usual (le, la, un, une become les or des), and that article is usually what tells a listener the noun is plural.

  • -eau: un bateau → des bateaux
  • -au: un tuyau → des tuyaux
  • -eu: un neveu → des neveux

When the next word starts with a vowel, the -x is pronounced as a z sound in liaison: des jeux amusants sounds like "jeu-z-amusants". That is the same sound a plural -s makes, so even then you can't hear which letter is written.

J'ai acheté deux gâteaux.
(I bought two cakes.)
Les enfants aiment les jeux.
(Children like games.)
The words
Nouns in -eau

This is by far the largest group, and it includes many basic words: bureau, chapeau, château, couteau, gâteau, manteau, oiseau, bateau, cadeau, cerveau, drapeau, rideau, tableau, morceau, anneau and eau itself. Animal words follow too: taureau, agneau, chameau, corbeau, moineau. So do seau, marteau, pinceau, plateau and niveau. Almost all of them are masculine. Eau and peau are the common feminine ones, and they still take -x: les eaux, les peaux.

Les manteaux et les chapeaux sont dans l'entrée.
(The coats and hats are in the hall.)
Il y a des oiseaux sur les bateaux.
(There are birds on the boats.)
Les enfants ont reçu beaucoup de cadeaux et de jeux.
(The children got lots of presents and games.)
Nouns in -au

Fewer words end in plain -au, but they follow the same rule: tuyau, noyau, boyau and matériau.

Attention aux noyaux dans les cerises !
(Watch out for the stones in the cherries!)
Nouns in -eu

Here you'll find jeu, feu, lieu, neveu, aveu and cheveu. You'll mostly meet cheveu in the plural, because les cheveux is the normal word for the hair on your head.

Elle a les cheveux longs.
(She has long hair.)
Tournez à droite après les feux.
(Turn right after the traffic lights.)
Compound nouns

In compounds, the -x goes on the noun, wherever it sits: des jeux vidéo, des jeux de société, des tableaux noirs, des panneaux de signalisation, des couteaux suisses.

Mes neveux jouent aux jeux vidéo tout le week-end.
(My nephews play video games all weekend.)
Watch out

A short list of words takes a normal -s. The ones you are most likely to need are pneu (tyre), bleu (bruise) and landau (pram). Rarer ones include émeu (emu, des émeus) and sarrau (smock, des sarraus). Learn these few as exceptions, but don't let them make you doubt the rest of the group.

Il faut changer les quatre pneus.
(All four tyres need changing.)
Après le match, j'avais des bleus partout.
(After the match, I had bruises all over.)

The most common mistake is the English-style plural: gâteaus, jeus, bateaus. If the word ends in -eau, -au or -eu, stop and write -x.

Summary

If a noun ends in -eau, -au or -eu, its plural takes -x: gâteaux, tuyaux, jeux, cheveux. You won't hear the -x, so trust the spelling rule rather than your ear. Only a few words take -s instead, chiefly pneus, bleus and landaus.
