Nouns ending in '-s', '-x' or '-z' stay the same in the plural
Most French nouns form their plural by adding -s: un livre, des livres. But what if the noun already ends in -s, -x or -z? Then nothing happens at all. Un prix becomes des prix, une voix becomes des voix, un nez becomes des nez. The singular and plural are spelled exactly the same.
English speakers often trip here because English adds letters to words like these: price, prices; box, boxes; bus, buses. That habit produces French errors like prixes, voixes or buss. In French, the final letter is already doing the job, so you leave the word alone.

How it works
The rule is about spelling only. If the singular ends in -s, -x or -z, the plural is identical. So how do you know a noun is plural? Look at the words around it. The article changes (le or la becomes les, un or une becomes des), and so do adjectives and verbs that agree with the noun.
In speech this matters even more. Since the final -s of a French plural is silent anyway, the article is usually the only thing you hear that tells you there is more than one.
Les prix sont élevés.
(The prices are high.)
J'ai deux bras.
(I have two arms.)
Here les, sont élevés and deux carry the plural. The nouns themselves don't change.
The words
This group is large, so it helps to sort the words by topic. Every word below is spelled the same in the singular and plural.
(The children have red noses because of the cold.)
People and animals
fils, roux, héros, intrus, souris (the animal and the computer mouse), ours, lynx, rhinocéros, phénix
Il y a des souris dans la cuisine !
(There are mice in the kitchen!)
Food and meals
repas, riz, jus, noix, noix de coco, ananas, radis, pois
Nous prenons trois repas par jour.
(We have three meals a day.)
Time, places and nature
mois, temps (time and weather), printemps, pays, univers, palais (palace), marais, bois (wood, forest, antler), puits, lilas, lis, cactus
J'ai visité trois pays en six mois.
(I visited three countries in six months.)
Money and prices
prix (price, prize, fare), prix de vente, prix de détail, prix de consolation, prix Nobel, taux de change, taux d'intérêt, taux d'inflation, taux de chômage, rabais, bonus, fonds de placement, fonds d'investissement
Les taux d'intérêt ont encore augmenté.
(Interest rates have gone up again.)
Everyday objects
bus, autobus, colis, tapis, matelas, cadenas, vis, tournevis, compas, atlas, tamis, vernis, rubis, croix, crucifix, faux (scythe), gaz, poids (weight, training weight), tas, amas, prospectus, permis de conduire
Rarer words like silex (flint) behave the same way.
Watch out
Compounds
The rule applies to the main noun, and the rest stays as it is. In des taux de change or des prix Nobel, nothing gets an extra letter. In des noix de coco, neither word changes.
Pronunciation
The spelling never changes, but os is the exception in sound. In the singular you say the s, but in the plural it usually goes silent, and you hear the liaison from the article instead.
Le chien a trouvé des os dans le jardin.
(The dog found some bones in the garden.)
Feminine forms
un roux gives des roux, but the feminine rousse ends in -e, so it takes a normal -s: des rousses.
Mass nouns
riz, paix and toux are mostly singular. When they do appear in the plural (types of rice, separate peace treaties), the spelling still doesn't change.
Il y a trop de choix dans ce menu.
(There are too many choices on this menu.)
Summary
If a French noun already ends in -s, -x or -z in the singular, its plural looks exactly the same: un prix, des prix; une voix, des voix; un nez, des nez. Never add letters. To tell singular from plural, look at the article, the adjectives and the verb, and in speech listen for les or des.
